As someone who was born in St. Vincent's Medical Center (also known as St. Vincent's Hospital) in CT, that confused me for a moment. Since southern CT is right next to NYC, I thought maybe something had gotten mixed up, but nope! Apparently, there are a whole bunch of St. Vincent's hospitals all over the world!

    Definitely go to libraries more! As a comic book fan, most libraries have at least some comics and it’s so nice to be able to go to the library and get 4 volumes to read for free instead of paying anywhere from 80 to 150 for all of them

    Love this but, your technique for making the beef sauce was just not right. Maybe it was lost in translation but with the shallots you do a very very fine cut and they essentially melt. There's a specific timing to clarifying the butter a bit and whisking the flour in for roux, and putting the broth in consistently to give it body- I'm sure the recipe assumed French people would know the starting steps lol
